Recipe of the Week: Fibre Filled Salad Starter

Registered Dietitian Amanda shares her fibre rich and colourful starter salad recipe. Filled with leafy greens, this fibre filled starter helps to slow blood glucose absorption.

Ingredients:

  • Cos lettuce
  • Mixed leaves including spinach, rocket and watercress
  • Olives
  • Chopped tomatoes
  • A tsp of extra virgin olive oil

Add extra fibre and protein to your plate and increase your plant count by adding a spoonful of mixed seeds.

Wash and chop your vegetables in preparation.

Layer your leaves and top with the olives, tomatoes and seeds.

Drizzle your extra virgin olive oil on top.
